Fettuccine Alfredo with Roasted Broccoli Recipe

Ingredients
- 12 oz fettuccine pasta
- 1 Tbsp flour
- 1 Tbsp dairy-free butter (sub with olive oil or avocado oil)
- 6 cloves garlic
- 1 - 6oz container Shire’s cheese
- 2 cups unsweetened almond milk
- 1 head of broccoli cut into bite-size pieces, removing large stalk pieces (sub 1 bag frozen broccoli if desired)
Instructions
- Set oven to broil. Cook pasta according to the directions on the box.
- Add broccoli to a baking sheet and drizzle with olive oil, set in oven for 5-10 minutes until light brown on top.
- Alfredo sauce: Heat a sauce pot over medium heat. Mix the butter and flour, add garlic, and simmer for 5 minutes. Add milk and cheese. Stir until creamy and lower heat about 3 minutes.
- Drain pasta and toss with the Alfredo sauce. Stir. Gently add in roasted broccoli. Enjoy!
