Fettuccine Alfredo with Roasted Broccoli

Fettuccine Alfredo with Roasted Broccoli Recipe

  • 12 oz fettuccine pasta
  • 1 Tbsp flour
  • 1 Tbsp dairy-free butter (sub with olive oil or avocado oil)
  • 6 cloves garlic
  • 1 - 6oz container Shire’s cheese
  • 2 cups unsweetened almond milk
  • 1 head of broccoli cut into bite-size pieces, removing large stalk pieces (sub 1 bag frozen broccoli if desired)


  • Set oven to broil. Cook pasta according to the directions on the box.
  • Add broccoli to a baking sheet and drizzle with olive oil, set in oven for 5-10 minutes until light brown on top.
  • Alfredo sauce: Heat a sauce pot over medium heat. Mix the butter and flour, add garlic, and simmer for 5 minutes. Add milk and cheese. Stir until creamy and lower heat about 3 minutes.
  • Drain pasta and toss with the Alfredo sauce. Stir. Gently add in roasted broccoli. Enjoy!
