Cheese-filled Zucchini Rounds Topped with Fresh Tomato Bruschetta Sauce Recipe

Ingredients
- 4 large zucchini sliced thinly, lengthwise about ¼ inch
- 1 - 6oz container Shire’s Garlic & Herb Cheese Spread
- 2 heirloom tomatoes, chopped.
- 2 cloves garlic, crushed
- 1 cup basil chopped
- ¼ cup olive oil
- 2 TBS Balsamic Vinegar
- Salt to taste
Instructions
- Set oven to 350 degrees. Place parchment paper on a large baking sheet. Add sliced zucchini and pat dry. Add salt and pepper to each side. Cook for 5 minutes.
- Remove from oven but keep the oven on. Add a dollop of Shire’s Garlic & Herb Cheese to each zucchini slice, spread the cheese on the zucchini, and roll. Place rolled zucchini into a casserole dish. Bake for 8 minutes.
- In a separate bowl, add the remaining ingredients, tomatoes, garlic, basil, oil, balsamic, and salt, and stir for a fresh tomato sauce.
- Once the zucchini is out of the oven, top with fresh tomato sauce and serve with your favorite flatbread or pasta.
