Creamy Lemon Pesto Pasta with Roasted Vegetables Recipe
Ingredients
- 1 box of bowtie pasta ( sub any pasta)
- 1 - 6oz container of Shire’s Classic Pub Cheese
- 1 zucchini, sliced in ½ lengthwise
- 1 yellow squash, sliced in ½ lengthwise
- 1 red pepper
- 1 red onion, peeled, sliced in half
- 1 container yellow grape or cherry tomatoes
- 1 cup basil
- ½ cup fresh baby spinach
- ¼ cup pine nuts toasted
- ¼ cup Shire’s Plain Cream Cheese
- ¼ cup olive oil
- 2 garlic crushed, separated into 2 portions
- 1/2 tsp crushed red pepper
Instructions
- Cook pasta according to directions.
- For the Pesto- Add cheese, basil, spinach, pine nuts, and garlic to a food processor and mix. Slowly add olive oil and pulse (turn the food processor on and off) for about 1 minute. Add 1 crushed garlic and a drizzle of olive oil with the yellow tomatoes in an aluminum foil packet.
- Place on grill with veggies for 5 minutes.
- Grill squash, pepper, and onion for about 8 minutes per side, slightly charred. After grilled, slice all veggies into bite-size pieces.
- Once pasta is cooked, spoon on Shire’s Classic Pub Cheese and stir. Then add pesto, grilled veggies, and tomatoes.
